Chocolate Burfi

       Chocolate Burfi is a dessert usually made with semolina n milk solids, it's so easy to make n tasty too.





Ingredients:

Rava or semolina - 1/2 cup.
Coco powder - 1/2 cup.
Sugar - 1/2 cup.
Butter - 1/4 cup.
Milk - 1 cup.
Cashew-nuts - 2 tbsp.

Method:

=> Heat 1 tsp if butter n stir fry cashew-nuts till golden brown.

=> Add in add semolina n stir fry till golden brown n set aside.

=> In an other pan bring milk 2 boil and add semolina mixture.

=> Dissolve coco powder with the boiling milk n add in to the milk.

=> Mix in semolina mixture, sugar.

=> Now add in rest of the butter.

=> Pour it in a greased pan , let it cool and cut into pieces.



=> Garnish the burfies with chopped cashew-nuts.

Kids loves this a lot.....................


Banana Walnut Cake


              Banana cake is easy to make and tasty to eat, banana bread is the special treat for a holiday gathering.



Ingredients:

All purpose flour or Maida - 2 1/2 cup.
Baking Soda - 1 tbsp.
Salt - a pinch.
Butter - 1/2 cup (un-salted).
White sugar - 1 cup.
Demerara sugar or brown sugar - 3/4 cup.
Eggs - 2.
Ripe bananas - 4 (mashed).
Buttermilk - 2/3 cup.
Walnuts- 1/2 cup (chopped).

Method:

=> Pre heat the oven.

=> Sieve in All purpose floue, baking soda n salt.

=> In a large bowl, wipe butter, white sugar n brown sugar until fluffy.

=> And beat in eggs one at a time.

=> Mix in bananas.

=> Add flour mixture alternatively with the buttermilk to the greased mixture.

=> Mix in chopped walnuts.

=> Pour batter into the greased cake pan.

=> Bake for 30 minutes.

And i am very sure that the baking smell tempts ur taste buds..........

Avial



Avial is a famous South Indian recipe. Avial has its origin from Kerala. Avial is prepared in almost every occasion. It is a preparation of number of vegetables and hence this dish is very nutritious. Avial recipe is accompanied well with rasam and sambhar.

It's very easy to make n nutritious too.......


Ingredients:

Raw Banana - 1.
Brinjal - 2.
Cucumber - 1.
Carrot - 1.
Drumstick - 1.
Clusterd beans -10.
Green chillies - 3(sliced).
Coconut - 1 cup(grated).
Cumin Seeds - 1 tbsp.
Musterd seeds - 1 tsp.
Red chillies - 2.
Turmeric Powder - 1/2 tsp.
Onion - 1 tbsp.
Garlic pods - 3.
Curry leaves - few.
Salt - as needed.
Curd - 1/2 cup.
Coconut oil - 2 tsp.

Method:

=> chop all the vegetables in medium equal size.

=> Grind coconut, green chillies, garlic, onion, turmeric powder and cummin seeds to a fine paste.

=> Boil all the vegetables with the grounded mixture by adding little water,salt and coconut oil till it's done.

=> Add curd n mix well.

=> Temper it with oil, 1 tsp musterd seeds, 1/4 tsp cumin seeds, 2 red chillies, chopped onion and curry leaves.

Now it's ready to serve........

Nan Khatai

Nan Khatai
Nan khatai is a shortbread cookie from India. It's a egg-less cookie. It is said 2 b originated in Surat, a large port city in Gujarat. This is the best evening time snack along with a cup of tea or coffee.



Ingredients:

Maida or All purpose flour - 1/2 cup.
Gram flour or Besan - 1/2 cup.
Rava or Sooji or Semolina - 1/2 cup.
Cardamom powder - 1/2 tsp.
Baking Soda - 1/4 tsp.
Unsalted Butter - 1/2 cup.
Sugar - less then a cup.
Sliced Almonds - 1 tbsp.
Pistachios  - 1 tbsp.

Method:

=> Sieve All purpose flour , gram flour and baking soda.

=> Mix in All purpose flour, gram flour, baking soda, cardamom powder and sooji.

=> Whisk butter n sugar in a separate bowl till smooth.

=> Add the above mix to the butter mix n kneed the dough.

=> Pre-heat the oven.

=> Take some 2 tbsp of this dough, flatten it, make a cross cut on  and placed on the greased tray.

=>  Press in some sliced pistachios and sliced badam and bake for 12-13 minutes.

=> Remove n cool.

=> Now nan-khatai is ready 2 serve.....

Paneer Peda

Paneer Peda:

This is an Indian Dessert/sweet made out of paneer n milk solids. In India, this is made in every occasions to celebrate.

what is paneer?

Paneer is a type of soft, crumbly cheese native to India. The cheese is traditionally made with cow's milk, and it is readily available in many Indian markets. It is also very easy to make paneer at home.
The cheese is considered to be an acid set cheese,which means that the cheese is curdled and set with the assistance of an acid such as lemon or lime juice, rather than rennet and bacteria.since paneer has no rennet, it is safe for vegetarians to eat. Since it is made with whole milk, it is also very high in protein.


How to make Paneer?

  • To make paneer, heat  two liters of whole milk until it is almost boiling. 
  • Next, squeeze in the juice of a lemon in 1/4 cup of water n mix, pour half of this mixture slowly into the milk   and stir the milk with a wooden spoon.
  • The milk should start to curdle, forming a chunky white layer of curds from a thinner watery layer of whey(by-product of cheese making) . 
  • Add more lemon juice mixture if this does not occur, and stir for several minutes. 
  • Next, line a colander (bowl-shaped sieve used to drain liquids from foods) with clean cheese cloth or muslin cloth, and pour the curds and whey into the colander. The whey will drain off, leaving the curds behind. 
  • Twist the cheesecloth to squeeze additional whey out, and hang it over the sink for half an hour. 
  • After the half hour has elapsed, twist the cheesecloth again to compact the cheese and drain more whey away.
  • Hang the paneer for another half an hour, and then take it down and refrigerate it for several hours before use to compact it. 
  • Use the cheese within three day. 

Paneer Peda:

Ingredients:

Paneer (preferably home made) - 1/2 cup (shredded).
Milk - 1/2 cup.
Milk powder - 1/2 cup.
Butter - 1 tbsp.
Sugar - 1/2 cup.
Cardamom Powder - 1/4 tsp.
Pistachios or Almonds (sliced) - 1 tsp( for garnishing).

Method:

=> Heat butter in a pan (preferably non-stick pan) , let it melt (shouldn't boil).

=> Add milk, milk powder and paneer, mix it well.

=> Stir continuously on medium flame till dough consistency is formed.

=> Now transfer the dough mixture into a bowl n let it cool.

=> Add sugar n cardamom powder n kneed well.

=> Now take a tablespoon of the mixture, make a ball n slightly press it on top or can use a cookie cutter to make different shapes.

=> Garnish 2 to 3 sliced Pistachios or Almonds.

=> Pedas can be refrigerated for a month.
