Zeera Rice - Quick n Nutricious..

                   Jeera is the hindi word for cumin seeds. It is easy to prepare unlike a biryani. Jeera rice or cumin rice is a very popular dish in Indian cuisine. It is a very simple dish that is prepared with very minimal ingredients. Here rice is obviously the main ingredient , Jeera (cumin) is added to give flavor to the rice.

                  Basically zeera rice is the combination of rice,zeera or cumin seeds, salt n vegetable oil but here in my recipe, i added green chillies, ginger garlic paste, onions, mint leaves n little bay leaf to provide extra zing.

                  Since this recipe is quick n tasty n goes well with raitha or pickle, i make this when iam not in a mood for cooking.... Cumin is highly nutritious as well as  basmati rice. Cumin plays a vital role in the process of digestion....ok, now let's look at the process of making cumin rice?!....



Ingredients:

Basmathi rice or long grain rice - 1.5 cups.
Zeera - 2 tbsp.
Bay leaf - 1/4 leaf (dry).
Green chilly - 2 (slitted).
Fresh mint leaves or pudina  - handfull (chopped).
Onoin - 2 (medium size-sliced ).
Ginger garlic paste - 2 tsp.
Salt - as needed.
Vegetable oil - 2 tbsp.
Water - 3 cups (it's in 1:2( rice:water) )

Method:

=> Clean n soak the basmati rice for half an hour.

=> Take 2 tbsp of oil in a  pressure pan, splutter 2 tbsp of cumin seeds n add in bay leaf.

=> Add in  a hand full of chopped mint leaves n stir-in for 5 seconds.

=> Add in slitted green chillies n stir in for about 3 seconds.

=> Add in 2 medium sliced onions n saute till golden brown.

=> Add in 2 tsp of ginger-garlic paste n saute till the raw smells disappears.

=> Add 3 cups of water, let it comes to boil.

=> Now add the soaked rice n salt n close the lid with the whistle on.

=> keep it on high flame exactly for 2 whistles, switch off the flame n let it b on the stove for 10 minutes as a standing time ( this is an alternative of "dhum method -Dum  really means choking the steam. This style of cooking give an unmistakable  aroma and a very unique flavor to the cooked food." ).

=> Now open the pressure pan, stir in gently n serve it with raita or pickles or with any north Indian curries.


Since it's nutritious n quick , it can be packed in kids lunch box for school.....

5 Minutes Mushroom Stir-Fry

Mushroom Stir Fry

                         This is the nutritious, tastiest, easy n quick recipe....Initially i use mushrooms for making a gravy,  pulao or briyani, but my kids liked 2 have only the mushrooms from the gravy or pulao...so i thought of making  this stir-fry for kids. here, mushroom is stir-fried along with chopped garlic n oregano seasoning That's it . Usually i used 2 store in the Domino's oregano seasoning for some stir-fried recipes n for Italian pasta recipes boco'z  domino's seasoning is the best combination of  black-pepper, red chillies,  oregano,garlic, basil and salt. this combination of seasoning provides a good taste n flavor......this can b done with 3 ingredients (i.e.,) mushroom, garlic n seasoning.....now here goes the process....



Ingredients:

Button Mushrooms - 400 grms.

Garlic -  1/4 tsp (finely chopped).

Oregano seasoning - 1/4 tsp( a pinch of oregano,black pepper, salt, basil n red chilly flakes).

Oil or Butter - 2 tsp.



TIP: To quick the cleaning process of mushrooms, Clean the mushrooms under the running water, one by one at a time.

Method:

=> Clean the mushrooms n dice it.

=> In a pan, add 2 tsp of oil or butter.

=> Drop in 1/4 tsp of finely chopped garlic n stir for 3 sec till the garlic turns slight brown.


=> Drop in 400 grams of diced mushrooms n stir on medium flame.

=> After a minute, mushrooms release its water n start 2 cook with it's water, now keep the flame in high till the water evaporates.( since the mushrooms cooks fast, it doesn't need any cooking time).

=> After the water gets evaporated, add in 1/4 tsp of oregano seasoning, switch off the flame n stir in for 3 more seconds.

That's it.....yummy mushroom stir-fry ready for kids. this can b take as a snacks or as a lite-byte after school .....

Quick Carrot Rice For Kids

Carrot Rice...
             
                   When I was a Kid, my mom used make this for lunch to school....me, as a kid being in school , luv this food eating along with friends......it's soo yummy that i want to pack this food for my kids too....Now, My kids also enjoys this along with their friends.....this recipe can b cooked  in no time with 3 main ingredients (i.e.,) carrot , onion n a green chilly...that's it...



Ingredients:

Carrot - 1 medium (grated).
Onion - 1 medium (chopped).
green chilly - 1(slitted ).
Fennel seeds / saunf - 1 tsp.
Cinnamon / pattai - small piece (just for flavor).
Salt - as needed.
Oil - 2 tsp.

Method:

=> Season fennel seeds /  saunf , cinnamon / pattai in 2 tsp of oil.

=> Add in a green chilly, stir for 3-4  seconds.

=> Add in chopped onion, stir fry for 2-3 minutes.

=> Add in grated carrot, stir fry for a minute on low flame n close the lid.

=> Let it cook without water on low flame for about 3 minutes with the lid closed but in between  make sure that it's not burnt.

=> After 3 minuted, check whether it's cooked, if not spray little water n cook for 2 more minutes with the lid closed.

=> Cool it n mix it with the steam rice (make sure the steam rice  is not hot).

It's done.....ready to pack into kids lunch box.....

Garlic Podi

Garlic Podi...

                           I learn it from one of my neighbor, they usually use it as idly podi or instant rice mix podi along with ghee...but as soon as i heard tis recipe from my neighbor i thought of  using it in my curries n in my chettinad recipes too......soon i'll try 2 post the recipes using garlic powder...it is very easy 2 make with only four ingredients in hand....n now here the procedure goes.....



Ingredients:

Dry Coconut - 1/2 .
Dry chillies - 7-8.
Garlic - 8-9 pods ( peeled).
Roasted Gram / Pottu kadalai - 1/3 cup.
Salt - to taste.

Method:

=> Dice the dry coconut n grind it till coarse powder.

=> Now  without oil ,slightly stir fry  coconut powder for 5-6 seconds , remove from pan n set it aside ( stir frying  too much spoils the final product ).

=> Without oil  slightly stir fry roasted gram / pottu kadalai for 10 seconds, remove from pan n set it aside. ( not more than 10 sec)

=> In the same way Slightly Stir fry red chillies without oil for 4 sec.

=> Grind red chillies, roasted gram/ pottu kadalai, raw garlic together till coarse powder.

=> Combine the coconut powder along with the above mix powder, salt  n grind it just 2 mix all the ingredients.......

Note: Refrigerate it in a air-tight container for further use. since dry coconut is used, it has a long life but since raw garlic is used, i recommend to refrigerate....let's double preserve it ;-)...


     Chettinad Pirattel  made delicious by adding a tsp of garlic powder to it....click on the pic to read the recipe of chettinad pirattel..



That's it.....Garlic Powder is ready 2 serve with idly or as a ready mix for steam rice......

Chicken chettinad (dry)

Chicken chettinad -dry (chicken uppukari)
                                  
                                            In chettinad, peoples call tis recipe as chicken uppukari. here the chicken  is cooked with very little ingredients.....the special abt this recipe is that it doesn't need any tomatoes but tastes soo good that peoples ask 4 more....it's  cooked in no time n is very easy 2 make.....all that u need is the 3 main ingredients - chicken,onions and spicy red chillies that's it.....here goes the process...



Ingretients:

Chicken - 250 gms (medium sized ).
Shallots or Small onion - 1/3 cup sliced (big onions can also b used ).
Red chillies - 5 nos (each broken to 3 parts).
Salt - to taste.
Saunf / Aniseed  - 1tsp.
Urad Dhall / Black gram - 1 tsp.
Oil - 4 tbsp.

Method:

=> In a pressure pan add in  4 tbsp of oil.

=> temper 1 tsp of  urad dhal n saunf / aniseed.

=> Add in red chilles n stir for 3-4 seconds.

=> Add in shallots / small onion n stir fry till onion turn pinkish.

=> Now add in chicken n salt , stir for a minute n close the lid for two whistle.

=> Allow the pressure to drop , open the lid.

=> If it's still watery then allow it to dry on high flame.

=>Garnish with coriander leaves n serve .

NOTE : NO WATER IS NEEDED FOR THIS RECIPE  SINCE THE CHICKEN SELF COOKS WITH IT'S WATER
