Spinach Paratha

Here's an Indian  recipe using SPINACH...



Ingredients:
Palak Leaves - 20 (small sized).
Green Chillies - 1/2 (chopped).
Salt - 1/2 tsp.
Turmeric Powder - 1/2 tsp.
Gram or Besan Flour (Optional) - 1 tsp.
Wheat Flour - 1 cup.
Oil - 1 tsp.

Method:

=> First Boil the Spinach Leaves for 1/2 minute n drain.
[WHFoods recommend boiling to free up acids and allow them to leach into the boiling water; Discard the boiling water after cooking; do not drink it or use it for stock because of its acid content. Do not cover the pot when cooking spinach].

 => Let it cool n blend the leaves along with green chillies.

=> Sieve the wheat flour n Besan or gram Flour(optional).

=> Add in salt turmeric powder n blended paste.

=> Add in water little by little until the dough is smooth enough.

=> Add oil n start Kneading for 3 minutes to make the dough soft.

=> Leave it covered for 5 minutes.

=> As usual for all roties n parathas, Start making the small dough balls, dust it n roll with a rolling pin.

=> Make parathas on hot tawa or grill till the golden brown spots appears.

=> Take it off from tawa n apply little butter for better delicacy.

It's done.............can be served with any curries.......ENJOY



TIPS:

HOW TO SELECT N STORE:

  • Choose spinach that has vibrant deep green leaves and stems with no signs of yellowing. 
  • The leaves should look fresh and tender, and not be wilted or bruised.
  • Do not wash spinach before storing as the exposure to water encourages spoilage. 
  • Place spinach in a plastic storage bag and wrap the bag tightly around the spinach, squeezing out as much of the air as possible. 
  • Place in refrigerator where it will keep fresh for up to 5 days.
