Palak Paratha

Spinach Paratha

Spinach is a greeny Vegetable that grows well in temperate climates, the plant is naturally rich in vitamins A and C, Calcium, and iron.

Health Benefits: spinach helps in...
  • Good Eyesight .
  • Strengthening Muscles.
  • Skin Protection.
  • Foetus Development: Folate found in spinach is needed by the growing foetus for proper development of new nervous system. 
  • Protein Rich for Infant’s Proper Growth: ‘Popeye’, the sailor man is known for his obsession for spinach. The cartoon was deliberately shown to eat spinach and get strong.
Here's an Indian  recipe using SPINACH...

Palak Leaves - 20 (small sized).
Green Chillies - 1/2 (chopped).
Salt - 1/2 tsp.
Turmeric Powder - 1/2 tsp.
Gram or Besan Flour (Optional) - 1 tsp.
Wheat Flour - 1 cup.
Oil - 1 tsp.


=> First Boil the Spinach Leaves for 1/2 minute n drain.
[WHFoods recommend boiling to free up acids and allow them to leach into the boiling water; Discard the boiling water after cooking; do not drink it or use it for stock because of its acid content. Do not cover the pot when cooking spinach].

 => Let it cool n blend the leaves along with green chillies.

=> Sieve the wheat flour n Besan or gram Flour(optional).

=> Add in salt turmeric powder n blended paste.

=> Add in water little by little until the dough is smooth enough.

=> Add oil n start Kneading for 3 minutes to make the dough soft.

=> Leave it covered for 5 minutes.

=> As usual for all roties n parathas, Start making the small dough balls, dust it n roll with a rolling pin.

=> Make parathas on hot tawa or grill till the golden brown spots appears.

=> Take it off from tawa n apply little butter for better delicacy.

It's done.............can be served with any curries.......ENJOY



  • Choose spinach that has vibrant deep green leaves and stems with no signs of yellowing. 
  • The leaves should look fresh and tender, and not be wilted or bruised.
  • Do not wash spinach before storing as the exposure to water encourages spoilage. 
  • Place spinach in a plastic storage bag and wrap the bag tightly around the spinach, squeezing out as much of the air as possible. 
  • Place in refrigerator where it will keep fresh for up to 5 days.

Ajwain Paratha

What is Ajwain?
Ajwain belongs to the same family such as caraway, dil as well as cumin. Here in India it is called bishop’s weed, ova or carom and is popularly used in the foods of the states of Maharashtra and Gujarat in India. It adds flavor to the foods.

Famously known as ‘omam’ in Tamil, ‘ajwain’ in Hindi, carom originates from middle east, later moved to Asia and other continents.
It can help to relieve excess gas from your body and in turn cure problems with your digestive tract. Regular intake of carom powder or seed will help in regulating the digestive system.

Can add these seeds into the dough of the rotis, parathas.

In India ajwain is used to flavor deeply fried foods.

It also helps in....

Weight Lose - Due to its effects in making your digestive system and so your metabolism work well, it helps reducing your weight naturally.

Fight against Cough, Flu Symptoms - By chewing carom seeds with or without betel leaves can help to control dry throat you get while coughing. To get relieved from nasal congestion, you can smell carom seeds by crushing them with your fingers.

N here's a RECIPE using Carom seeds.....


Wheat Flour - 1 cup.
Besan or gram flour - 1/2 cup.
Ajwain or Carom seeds - 1tsp.
Green chilly(crushed)- .
Turmeric pwd - 1/2 tsp.
Salt - 1/2 tsp.
Yogurt or thick curd - 1/4 cup.
Oil - 2 tsp.
Water - As needed.


=> Sieve gram flour, wheat flour.

=> Now add ajwain or carom seeds, green chilly, salt, turmeric pwd n mix well.

=> Now add curd n mix.

=> Add water n mix well 2 get the soft dough consistency.

=> Add 2 tsp oil n kneed well.

=> Leave it Covered with a damp cloth for 10 minutes.

=> Take a little dough, make a ball shape n dust it with wheat flour.

=> Roll the dusted dough with a rolling pin till till to the desired width.

=> Make parathas on hot tawa till  golden brown spots appears.

=> Take it off from tawa n apply little butter on to it for delicacy.

It's done.........can be served as it is or with curd or pickles....

Mix Veg Roti


Wheat Flour - 2 cups.
salt - 1/2 tsp.
Sugar Powder - 1/2 tsp.
oil - 1 tsp(to make the dough soft).
Water - To Make  the dough.
Vegetables(any of ur choice) - 1/2 cup(shredded).
Coriander Leaves - 1 tbsp(finely chopped).


=> First chop all the Vegetables( here in this recipe i used violet cabbage, potato, cauliflower).

=> Stir fry these veggies with a pinch of salt for a minute n let it cool.

=> Now sieve the wheat flour, add salt n sugar powder, mix well.

=> Add stir fried n cooled veggies 2 the flour mixture.

=> Add water little by little 2 make the dough.

=> Add 1 tsp of oil n kneed well until it is soft.

=> Leave it covered with damp cloth for 10 minutes.

=> Make a ball out of the little dough  n flatten it within ur palm.

=> Roll it with the rolling pin to make a thin roti.

=> Now put it on the hot tava, wait till small bubbles appears n turn it over n vice versa, till both sides r cooked.

=> Now MIX VEG ROTI is done.....

Can be taken as it is or with pickles or with any curries.................

Fish Fry - Must Taste



Black King Fish (nei meen) - 1/2 kg medium sliced.
Chilli pwd - 2 tsp.
Crushed garlic - 3 pods.
Chopped curry leaves - few.
Turmeric pwd - 1/4 tsp.
Corn flour - 2 tbsp.
Salt - As needed.
Red color pwd - A pinch.
Oil - 1 tspn (to make a thick masala consistency).


=>Clean the fish with water n lime juice n pat dry.
=> Mix chilli pwd, corn flour, turmeric pwd, garlic, salt, red color, oil, curry leaves.
=>Apply this paste on to the fish n marinate for 20-30 min.
=>Deep fry the marinated fish n ur fish fry is ready.....

SERVE IT HOT........................

This is My favorite food ever.......My mom used 2 say that Meena can survive by having this fish fry for life....


Chick Chick Chicken Lollypop's



1. Chicken lollipops - 12 pieces.
2. Ginger Garlic paste – 1 tsp.
3. Lime juice – 1 tsp.
4. Yogurt – 1 tbsp.
5. Pepper pwd – 1/2 tsp.
6. Red chilli pwd –1/2 tsp.
7. Kasoori methi powder – a pinch.
8. Cumin pwd – 1 ½ tsp.
9. Garam Masala pwd – ½ tsp.
10. Coriander Pwd – 1 ½ tsp.
11. Turmeric pwd – ¼ tsp.
12. Red color – A pinch.
13. Chat Masala – ½ tsp.
14. Salt – As needed.
15. Oil – 1 tsp.


=> Clean n pat dry the chicken pieces.

=> Now mix all the ingredients from no.2 to 15 in a separate bowl and apply it on the chicken pieces n marinate it for 30 minutes or more …..More marinating = More tasty lollipops.

=> Now deep fry the chicken pieces n serve hot......That's it.....DONE....

Personally  I luv these Lollipop's that i can have it at any time even I am not feeling hungry at all.........

The AROMA of these Lollipops TICKLE UR TASTE BUDS....WOW.......on typing this my taste buds drooling for it..........

When I first came to Covai, I was tempted by these groundnut salads sold by the road side vendors.......i decided to make it hygienically with  my favorite combination of spices.....it's very easy n quick 2 make....

 Groundnut Salad


Steamed Groundnuts - 1 cup.
Cucumber - 1/4 cup (chopped).
Onion  - 1 tbsp(chopped).
Tomato - 1 tbsp(chopped).
Coriander Leaves - 1 tbsp(chopped).
Lemon Juice - Few drops.
Salt - To taste.
Chilli pwd - A pinch.
Cumin pwd - A pinch.
Coriander pwd - A pinch


=>Mix all the above in a bowl n SERVE......DONE.........THAT'S IT........

U can make this with ur favorite combination of veggies, fruits n spices along with steamed groundnuts. 

MY KIDS LOVE IT AFTER SCHOOL..................

Cool Lassi

A survey shows that INDIA is a warm country that it's warm for almost 5 months a year.........
so in warm days sipping this recipe- LASSI is heavenly delicious 2 when u feel thirsty.....
I usually like 2 LASSI by simply adding either sugar or salt to curd.....but once my neighbor served me a LASSI in which she added some spices......it was soo delicious n after that i used to make lassi in that way for me n my family.......U TOO GIVE IT A TRY......

Home made curd - 1 cup.
Water - 1/4 cup.
Salt - 1 tsp or as needed.
Cumin Powder - 1/4 tsp (dry roast the cumin seeds slightly n make a fresh powder).

Coriander Powder - 1/4 tsp (dry roast coriander seeds slightly n make a fresh powder).

Green Chillies(optional) - 1/4 tsp (finely chopped) or Chilli Powder - a pinch.


=>Combine cold curd n cold water.

=>Add salt, cumin pwd, coriander pwd, green chillies or chilli powder to the above mixture.

=>Now whisk above mixture until forth appears.

=>DONE.....it's time to SERVE IT with mint leaves or coriander leaves.

My son couldn't wait 2 serve n so he zipped a straw into the lassi to have it  while iam capturing a pic of COOL LASSI.

Palak Leaves( spinach leaves) - 15 whole leaves.
Gram Flour - 1 cup.
Rice flour - 1 tbsp.
Chilli Pwd - 1 tsp.
Turmeric Pwd - 1/2 tsp
Red Color Pwd - A pinch.
Salt - 1 tsp.
Baking Soda - 1/4 tsp.
Carom seeds or Omam(in tamil) or Ajwain seeds(in hindi) - 1/2 tsp.
Water - for the mixture.
Oil - for deep frying.


=>clean the leaves with water n pat dry.

=>Sieve the gram flour n rice flour to avoid lumps in the mixture.

=> Now add chilli pwd, turmeric pwd, salt, baking soda and  carom seeds.

=> Mix it well.

=>Now add the red color pwd to 1 tbsp of water n dissolve well n add it to the flour mixture.

=>Now add more needed water to the flour mixture till u get the consistency (the consistency should not be too thick or too thin).

=>Now dip the leaves one by one into the batter n deep fry.


my KIDS LOVE IT......since we have seeded some spinach in a pot...my kids used 2 plug off some fresh leaves to make SPINACH BAJJI......

This recipe can be DONE IN 5 TO 10 MINUTES if u have all the materials in hand...


Nuts Cookies


Wheat flour - 1 cup
Caster Sugar - 3/4 cup
Almonds, Pistachios, Cashews-1/4 cup (finely sliced)
Cardamom pwd - 1/4 tsp
Butter - 8 tbsp (room temperature)
Milk - 2 tbsp


=>Pre heat the oven.

=>In a bowl, mix wheat flour, sugar, sliced almonds, pistachios, cashews and cardamom pwd.

=>Now add  butter and milk to the flour mixture to make a soft dough.

=>Now take a tbsp of dough n make a ball n press it lightly on the top

=>Place all the pressed balls on a baking sheet or baking pan about inch apart

=>Bake the cookies for about 18 minutes or until cookies are lightly golden brown

=>Remove the cookies from the oven. Let the cookies cool down for abt 5 minutes b4 taking off from the cookie sheet.

This is a very HEALTHY RECIPE n KIDS WON'T SAY NO to these cookies..

BY SURE the aroma tempt u 2 taste it while u bake it.... TRY IT N LET ME KNOW...

To attract Kids.....U can top up with colored sugar balls n bake ...ENJOY KIDS..

Sweet Appam

Wheat flour – 1/2 cup.
Maida - 1/2 cup.
Sugar -1/4 cup or as needed.
Salt - a pinch (to enhance the taste).
Baking soda - a pinch.
Cardamom powder – 1/4 tsp
Coconut powder - 1 tbsp[optional].
Water as needed.
Oil to fry.


=>Sieve wheat flour n maida flour n baking soda.

=>Mix well wheat flour, maida flour, salt,baking soda, sugar without adding water.[can add coconut powder  which is optional].

=>now add water n make the batter, the batter should b like a dosa batter(not thick as idli batter or very thin).

=>Heat oil in pan ( i use non-stick pan 2 avoid sticking 2 the bottom).

=>Pour approximately 5 tbsp of batter into the oil.

=>Deep fry till golden brown n turn the aapams n cook till golden brown.
