Indian Doughnut / Kalkandu Vadai
This sweet doughnuts are very popular in Chettinad (south India) and it's pleasant-tasting, spongy, fluffy and heavenly taste!!!....vah!... deeeliiiiiiiiciousssssssssssss... wanna taste it! yup! treat urself with these vadai's in just 45 - 60 min's....
Raw rice - 1 tbsp.
Toor dhall / split pigeon peas - 1 tbsp.
kalkandu / sugar candy / sugar - 3/4 cup (powdered).
Elaichi / cardamom - 1/4 tsp (optional).

Ingredients :
Urad dhall / black gram - 1 cup.Raw rice - 1 tbsp.
Toor dhall / split pigeon peas - 1 tbsp.
kalkandu / sugar candy / sugar - 3/4 cup (powdered).
Elaichi / cardamom - 1/4 tsp (optional).
Method:
- Soak urad dhall, raw rice, toor dhall for 45 min and strain.
- Blend it without water (can add water drops if needed but preferably avoid using water) since it loosens when sugar is added in step 3.
- Add kalkandu(powdered) / sugar powder, cardamom powder (opt) and blend.
- Take small portion of batter on a greased plastic, wet hands => tap => make a hole in the center with a finger.
- Slide it in hot oil and deep fry on medium heat as usual till golden brown on both sides.
Tips:
- Can add 1 cup sugar if you have a sweet tooth .
- Raw rice, toor dhal is added to avoid absorption of oil and to add outer crispness .
- The actual recipe don't call for cardamom but can be used for the hint of flavor.
- Always wet the hand b4 making each vadas so to prevent sticking.
- The vadas tend to change in color so fast becoz of sugar so deep frying on medium flame is advisable.
- If u feel making doughnut shape is difficult then can go in for ready made vada / doughnut making manual machine which is available in the market.
- or can squeeze it out in different shapes(alphabets, geometric shapes, can also do their name) using a piping bag which will definitely attract kids.
