OPOS GOOSEBERRY PICKLE
OPOS Gooseberry/Aamla Pickle

I am jotting this recipe below after a perusal from "Anyonecankoch" webpage along with an experiment on the same!

I have to mention my humble thnx to Mr.Ramakrishnan ji for OPOS!
METHOD:
In a 2 L pressure cooker....
Layer 1 - Add 1/4 cup sesame oil
Layer 2 - Add 500 grams washed, cleaned, de-seeded, thick sliced gooseberries.
Layer 3 - Add 3 tsp salt , 5 tsp chilli powder, 6 tsp dhaniya/coriander powder, 2 tsp jaggery/brownsugar, 1/2 tsp fenugreek powder, 1 tsp tumeric powder 1/2 tsp asafoetida powder
Close & cook on high for 2 whistles.
Release pressure.
Mix all
Finally make a quick tadka/tempering with 1 tbsp sesame oil + mustard seeds(let it splatter) => switch off flame and quickly add in 1/4 tsp tumeric powder + 1/2 red chilli powder +1/4 tsp asafeotida powder, pour it on pressure baked mixture and stir!
Thats it! cool & store it in a airtight container & refrigerate.
It tastes awesome😋! Jus go for it 💁!
